Nowadays, it is rare for me to turn up anywhere without some sort of treat. Meetings always involve a box of crumbles or a creation for the blog and birthdays are no different! This week, one of my closest and oldest friends was celebrating her birthday and I knew that on this occasion I really had to create something extra special to send to her. Cakes can be one of the trickiest things to bake as without eggs and baking powder, it can be really hard to get a nice texture. This one is so simple and delicious! – You really can’t go wrong with a mix of Peanut Butter and cacao.
- 300g Peanut Butter
- 150g Ground Almonds
- 200ml Almond Milk
- 175ml Maple Syrup
- 5 Tablespoons Cacao Powder
- 30g Buckwheat Flour
- Pinch salt
- 100g Peanut Butter
- 50ml Maple Syrup
- 2 Tablespoons Cacao Powder
- Pinch Salt
Preheat the oven to 180 degrees Celsius.
Grease a 7” tin with coconut oil.
Mix all the cake ingredients together in a bowl and bake for 30-35 minutes.
Whilst the cake is cooling, mix all the frosting ingredients together.
Spread the icing over the cooled cake and serve.
