Surprising though it may seem given the number of sweet recipes I upload and dessert photos I post, I do also love savoury food and experimenting with savoury flavours every once in a while! This dish is my take on a chicken satay and it is truly truly delicious! I swapped the chicken for aubergine which is an amazing replacement but chicken chunks are equally as good. I served mine alone side some short grain rice which I cooked and then mixed with a pinch of salt, a squeeze of lime and some freshly chopped coriander and it was the perfect, fresh accompaniment.
