Pizza is one of my all time favourite things and one of the few meals that I truly truly miss! This recipe is really similar to my quinoa loaf that I shared last week and it makes the most delicious crunchy crust! I love to top mine with tomato sauce and loads of vegetable and herbs but you can put whatever you want on there!
- 220g dried quinoa - cooked
- 2 tablespoons olive oil
- 1 tablespoon ground flax
- 1 teaspoon thyme
- 1 teaspoon rosemary
- 1/2 teaspoon salt
- juice one lemon
- 4 tablespoons water
Preheat the oven to 200 degrees celsius.
Cook the quinoa according to packet instructions until it is really dry - if it is too wet it won't work!
Leave the quinoa to cool for about 20 minutes before adding it to the food processor with all the other ingredients.
Blend until the mixture really comes together and is doughy.
Drizzle olive oil onto a tray or bottom of a cake tin and a little on your hands too and then spread the dough out with your hands.
Bake for 20 minutes then remove from the oven and turn the heat down to 180 degrees.
Add your toppings and return to the oven for a further 10 minutes.
