There’s a really lovely little cafe just round the corner from my flat which makes the most delicious rainbow salad; I always order it but I thought it was about time that I attempted to recreate it! It’s so simple and full of lots of different delicious vegetables mixed with a ginger, lemon and honey dressing.
- 1/4 of a red cabbage
- 2 carrots
- 1 red pepper
- 1 apple
- 2 handfuls of kale
- 1 big handful of parsley
- 1 1/2 avocados
- 2 inch piece of ginger finely chopped
- 3 1/2 tablespoons honey
- 5 tablespoons extra virgin olive oil
- 6 tablespoons apple cider vinegar
- juice of two lemons
- seeds to sprinkle on top
Finely chop/ julienne or spirals the pepper, carrot, apple and cabbage and add to a bowl along with the kale, chopped avocado and parsley.
Mix together all of the dressing ingredients in a bowl and then pour this over the salad, mixing with your hands and massaging the kale to soften it a little.
Sprinkle the seeds over the top and you are ready to serve.
