Whether or not you’re a matcha fan, you’ll love these granola bars! They’re wonderfully sweet, whilst also having a great texture from the brown rice puffs and pumpkin seeds. I love eating them for breakfast, as they’re packed with goodness to really set you up for the day. Saying that, I have been known to devour 3 in the space of 10 minutes when I hit that 4pm energy slump too!
- 2 cups oats (160g)
- 1 cup rice puffs (25g)
- 1/2 cup brown rice syrup (150g)
- 1 1/2 teaspoon vanilla powder
- 1/2 cup cashew butter (120g)
- 2 teaspoons matcha powder
- 1/3 cup flaked almonds
- 2 tablespoons coconut oil (35g)
- 1/3 cup pumpkin seeds (40g)
- 7 chopped medjool dates (140g)
Start by adding the coconut oil, cashew butter, vanilla, rice syrup and matcha powder into the food processor and blending until combined and smooth.
Add the oats and pulse until combined.
Pour the mixture into a bowl and add in the rice puffs, flaked almonds, seeds and dates and mix with a spoon or your hands until it comes together.
Spoon the mixture into a lined baking tray, flatten down with the back of a spoon and leave in the fridge for an hour or two to set.
Slice into squares and store in the fridge.
