This has been one of the most popular recipes at my Afternoon tea events and so I though that it was about time that I shared it with you all so that you can make it for yourselves at home! It is truly the most delicious thing and the most similar thing I have tasted to real bread in a long time!
- 340g quinoa
- 4 tablespoons ground flax
- juice of one lemon
- 1 teaspoon thyme
- 1 teaspoon rosemary
- 1 teaspoon salt
- 60g mixed seeds
Preheat the oven to 180 degrees celsius and line a loaf tin.
Cook the quinoa according to packet instructions until it is really dry - if it is too moist the bread won't work.
Allow the quinoa to cool for about 20 minutes and then add it to the food processor along with all the other ingredients except for the seeds.
Blend until it comes together into a dough like consistency. - This may take a few minutes.
Add in the seeds and pulse.
Pour into the tin and press down, flattening the surface.
Bake for 90 minutes and then remove from the oven, peel off the greaseproof paper and leave to cool.
