Toasted hot cross buns always remind me of Easter and Spring and so I was desperate to make my own version to enjoy this year. These ones are really soft and absolutely delicious spread with lots of almond butter!
- 200g ground almonds
- 80g buckwheat flour
- 120g ripe banana
- 5 teaspoons mixed spice
- 100ml maple syrup
- 80g raisins
- zest of one orange
Preheat the oven to 180 degrees celsius and line a tray with baking paper.
Mix together the mashed banana, ground almonds, maple syrup and buckwheat flour. I like to used my hands to do this and just make sure it is really well combined!
Set a 1/4 of this mix aside and then to the remaining 3/4 add the mixed spice, orange zest and raisins.
Roll into 6 balls and place onto your lined tray.
I added the crosses at this point but if you want them to appear whiter, you can skin step 6 and add the cross at the end.
Next, roll the mixture that you set aside into thin strips and use this to make the crosses on top of each bun.
Bake for 20 minutes.
