Granola is one of my all time favourite things but I always find myself hunting for the clusters of crunchy, oats deliciousness. I am so in love with this recipe because it is literally those bits of granola that everyone fights over! They’re also the simplest and easiest thing to make and they’re great for taking on-the-go; I took a big bag of them on the Plane with me this week as I had a long haul flight and didn’t want to risk being hungry – of course they were gone within an hour of take off!
Ingredients:
- 150g jumbo oats
- 100g oat flour
- 2 teaspoons cinnamon
- 2 tablespoons chia seeds
- 100g chopped pecans
- 3 tablespoons coconut sugar
- 9 tablespoons maple syrup
- 40g raisins
- 15g desiccated coconut
- 50g melted coconut oil

Preheat the oven to 180 degrees celsius and line a baking tray with greaseproof paper.

Mix all of the ingredients together in a big bowl until well combined.

Using your hands, roll the mix into big granola balls (it should make around 12) and place on the lined tray.

Bake for 25 minutes and then allow to cool on the tray.
