This a tasty post dinner treat or afternoon pick me up! We love chocolate in the LK office (no surprise there) and we all love fruit and nut – so this seemed like a perfect combination.
Fruit and Nut
- ½ cup Almonds (85g)
- ½ cup Cashews (108g)
- ¼ cup Hazelnuts (40g)
- ¾ cup dried Apple (60g)
- ½ cup Raisins (105g)
- 1 cup dried Apricot (250g)
- ½ cup Coconut flakes (30g)
- ½ cup Goji berry (50g)
- 1.5 cup Cacao butter (200g)
- 1 cup Cacao (200g)
- 1 cup Maple syrup (150ml)
- Pinch of sea salt
Start by roughly chopping the nuts, apricots and dried apple into bite-sized pieces and then place these to the side.
To make the chocolate. Put the cacao butter in a bain marie and melt this until it reached 40-42 degrees Celsius.
Once it has reached the correct temperature, add in the maple, cacao powder and salt. Stir this through to ensure that it mixes well.
Take the bowl away from the heat and keep stirring the chocolate. Monitor the heat with the thermometer until it reaches 30 degrees Celsius.
Once the chocolate has reached the desired temperature, add in all of the dried fruit and nut and stir to make sure they are fully covered. Place this on a lined baking tray and set aside to firm up.
Once this has firmed, cut it into squares and enjoy! This is best kept in the fridge or freezer.
