These are the best way to start a morning, the sticky coconut caramel paired with espresso is the perfect combination. I made a big batch of these on Sunday to eat all week, they are just the best!
- 3.5 cups oat (280g)
- 5 tbsp cashew butter (175g)
- 1 tsp vanilla
- ¼ cup coconut oil (15g)
- 250g Medjool dates (11 dates)
- 1/3 cup cashews (50g)
- 3 tbsp coconut sugar (30g)
- 5 tsp instant coffee
- 3 tbsp maple syrup
- 1/3 cup desiccated coconut (25g)
- Pinch of Sea Salt
Line a baking tray and set this aside.
Add all of the ingredients to the food processor and blitz until everything comes together in a sticky mix.
Spread this into the tray and place in the fridge to firm up.
Cut up and enjoy!
